Vipur Franchise GmbH is a growing gastronomy company in Germany, known for fresh products, creative dishes, and high quality standards.

It operates 12 Purino restaurants and 4 steakhouses in Germany. With a clear focus on in-house production, Vipur produces around 95 percent of its dishes itself – a particular challenge for purchasing, production, and calculation.

Initial situation

Before the introduction of necta, the monthly closing at Vipur was a laborious process: often it only became apparent weeks or even months later how high the cost of goods actually was. Excel lists and manual calculations led to delays, a lack of transparency, and sources of error.

Goals & Decision Basis

For Vipur, the introduction of necta was a strategic step to strengthen the company’s business foundation and secure its continuous growth path. The focus was on how transparency, quality and efficiency can be guaranteed in the long term.

  • Real-time transparency: Previously, deviations in the cost of goods were often only visible weeks or even months after the monthly closing. With necta, Vipur now has the ability to identify deviations immediately and take early corrective action.
  • Standardized recipe and portion logic:
In order to achieve the same quality and consistency at all locations, it was crucial to clearly define recipes and quantities. With necta, the teams now work across locations according to the same specifications – from the grammage to the ladle size.
  • Reliable inventories: Inventory differences posed a major challenge. Vipur was looking for a solution that would facilitate regular reconciliation and minimize sources of error.
  • Adaptation to a fresh kitchen concept: While large chain restaurants such as McDonald's have established their standards for decades, Vipur had to find a solution that is tailored to a kitchen with fresh, self-produced ingredients. The goal was to combine the advantages of process reliability with its own philosophy of freshness and creativity, which was perfectly achieved with necta.
  • Scalability and future security: From the outset, it was clear that the system should not only make the existing locations more efficient, but also create the basis for further growth.

With these goals in mind, Vipur chose necta – as a system that on the one hand creates business security and stability and at the same time offers sufficient flexibility to enable creative and individual processes.

Project progress

The introduction was driven in particular by the management. All basic products were first created in the system itself before the processes were transferred to all restaurants.

Today, all Vipur locations work with necta. A central person continuously maintains products, promotional cards and price changes. Via interfaces such as Cisbox, invoices are automatically reconciled.

Results & Benefits

With necta, Vipur was able to not only digitize central processes, but also measurably improve them, from more transparency to noticeable efficiency gains.

Initially, there were reservations on the part of the employees (“we don’t need it”). However, with daily use, it quickly became clear that the work becomes more structured and comprehensible. Today, everyone appreciates the clear processes and the transparency. In particular, the franchisees see the immediate benefits in their daily work and actively pass this feedback on to their teams.

Training requirements

The training effort was manageable and targeted. Introductory training combined with close support led to rapid acceptance in the teams. Today, necta is firmly anchored in everyday work.

Technical insight

Via the connection to Cisbox, all relevant invoice data is automatically transferred to accounting. The integration with the POS systems enables a direct comparison between sales and cost of goods – a crucial basis for transparency and business management. In addition, Vipur regularly compares sales, consumption and invoices. This creates a complete picture that secures decisions in day-to-day business.

Future Perspective

Vipur is already thinking one step ahead and is currently working on innovative scenarios for the future. One goal is AI-supported menu planning, in which promotional cards will be created automatically in the future – including fixed cost of goods and seasonal products. It is central for necta that all data is processed securely and that no sensitive information gets into external systems uncontrolled. Data protection and data security are always the top priority.

Prognosis tools should also help Vipur to control pre-productions even more precisely based on sales and consumption data.

In addition, Vipur is testing new interfaces: In initial pilot projects, employees receive auditory instructions via earphones. From a long-term perspective, this information could be fed directly from necta’s recipes. This form of support increases motivation, speeds up workflows, increases efficiency in everyday kitchen operations – and at the same time opens up new ways to counter the shortage of skilled workers in the industry.
